Rosemary and Garlic Sweet potatoes!

When it comes to potatoes, Rosemary and garlic are sure winners. Now that’s with your standard white potato. But what about their carotene-rich sisters? How well do they fare with this magical combination? If you were wondering the same thing, wonder no more! I have found the answer and the answer is:

Sweet potato is also very delicious cooked with Rosemary and Garlic! I’ve even written a recipe for you

Ingredients 

  • 4 sweet potatoes (or more or less), roughly chopped in to cubes
  • 2 cloves garlic, diced
  • 4 stems of Rosemary, the leaves separated
  • 1 onion, chopped (optional)
  • 250g mushrooms (optional)
  • Salt and pepper, sprinkled on, to taste
  • Rapeseed oil or olive oil, for cooking

Method

  1. Preheat the oven to 170°C
  2. Prepare all ingredients and mix together in a roasting dish and put in the preheated oven
  3. Cook for 20 minutes, then take the dish out to ‘stir/toss’ everything around
  4. Cook for a further 15 minutes or until the sweet potatoes are the texture you prefer
  5. Enjoy!

Rosemary and garlic is one of those winning combinations! I love putting them together on ANYTHING! The first time i made this was without the onion and mushroom and was just as fabulous. The onions and mushrooms were added more to use up veg and I was later pleasantly surprises as to what a great combination the dish as a whole made!
